Plumbing is the trade most likely to cause the damage another trade has to repair. That is a good reason to have both under one roof.
Supply lines fail, drains back up, and water heaters reach end of life. When any of those happen inside a finished building, the plumbing repair is the small part and the water damage is the large part.
Remodels concentrate the risk. Moving a kitchen or bath means opening walls and floors and relocating supply and drain lines, and drain slope is not negotiable. A drain that runs level enough to fit the framing is a drain that will need to be opened again.
We self-perform plumbing and restoration both, so a failure that becomes a water damage project does not require two companies to sort out.

Yes, within the limits of drain slope and venting. Supply lines are flexible about routing. Drains are not, and a drain forced to fit the framing rather than the slope requirement will need to be opened again.
Replacing supply piping throughout a structure. It is appropriate where the existing material has reached end of life and repeated repairs are treating the symptom.
Without proper venting, drains do not flow correctly and traps can siphon, which lets sewer gas into the building. Venting is not optional and it is frequently wrong in older work.
Sometimes. A water heater in a finished space above living area is a water damage event waiting for a schedule. Relocation during a remodel is far cheaper than the repair afterward.
