Finishing is where drywall is won or lost. Joint treatment, sanding, and finish level determine what the wall looks like under real light, and a poorly finished wall shows every joint once paint and side lighting are on it.
Texture matching is the hard part in repair work. Existing texture was applied by a particular hand with particular material, and matching it into a patch is the difference between a repair nobody notices and one everybody does.
In restoration, drywall is also a moisture question. Board that has been wet is removed rather than dried in place, and the cut line is set by moisture readings rather than by convenience.

Generally it is replaced. Board that has been saturated loses integrity and can hold moisture against framing, and the cut line is set by moisture readings rather than by where a cut would be convenient.
How completely joints and fasteners are treated and sanded. Higher levels matter most in rooms with strong side lighting or gloss paint, where every imperfection is visible.
We match as closely as the texture type allows. Some ceiling textures are genuinely difficult to match into, and we will say so before starting rather than after.
